Honey Pecan Pie

Ingredients

  • 1 cup of honey
  • 3 well beaten eggs
  • 1/4 cup of good tasting yeast
  • 1/4 cup of butter of less
  • 1 1/2 cups of Pecans (or cashews or walnuts)
  • 1/2 tsp vanilla
  • 1 9″ unbaked pie shell (see recipe below for 2 9″ unbaked pie shells)

Directions

Mix honey with eggs. Add butter and yeast to honey mixture.  Stir in Pecans and vanilla.  Pour in uncooked pie shell and bake at 375 degrees for 55 minutes and check.  Don’t over cook or over brown.

Whole Wheat Pie Crust

(This recipe will make two pies.  If you want, you can just double the receipe for Honey Pecan Pie)
 

  • 1/4 tsp salt
  • 1 cup WW flour
  • 1/2 cup WW pastry flour
  • 1/4 cup oil
  • 4-6 tablespoons cold water (tablespoon at a time)

Mix and roll as thin as possible between waxed paper.  If crust is to be precooked, bake 15 min. at 350 degrees.
