One of my favorite culinary tricks is a great soft boiled egg. While poached eggs are amazing, soft boiled eggs are a little bit more low maintenance but still provide you with a runny yolk in a soft egg white. They revitalized my breakfast game a couple of years ago when I was bored with scrambled and fried eggs, but too sleepy and impatient to poach on a workday morning.
While soft boiled eggs are perfectly delicious with toast for breakfast, I also love adding them to a salad with a spritz of lemon (the acid and yolk of the egg combine to
make a heavenly dressing). Or try the recipe below for one of my new favorite ways to eat them, inspired by a dinner I had in Nashville last year. The most important thing to keep in mind here is the quality of the egg you start with. A fresh egg from a pastured hen tastes amazing. It’s beautiful, with a vibrantly colored yolk, and it tastes rich and delicious–the yolk is almost cheesy. A bland egg without much flavor is a great disappointment, so for maximum nutritional and flavor pay-off, be sure to start with a good egg.
Soft boiled eggs
Simply bring a saucepan half full of water to a rapid simmer over a medium heat, and lower in your eggs one at a time. Some suggest placing the egg on a spoon and dipping them in and out of the simmering water a few times before lowering to the bottom of the pan to prevent breaking. I find that as long as I’m using fresh eggs from the market and not dropping them into the water carelessly, the eggs don’t break. Cook for five minutes (for a runny egg) or seven minutes for a soft-set. The timing can take a few tries to get right, but work with a timer and adjust the time to achieve your perfect egg.
Drain the eggs and rinse them under cold water for about 20-30 seconds.
Lop off the tops of the eggs with a sharp knife (be careful!) and dunk pieces of toast into the yolk, or tap and roll the shells to create fine cracks all over the egg before peeling to reveal the whole egg.
